What lovely weather for a BBQ. Although we can't invite friends and family we can still enjoy our food. I'm Greek Cypriot and we have salad with almost everything.  If you are missing your traditional Greek salad or you would like to make my version of the Cypriot one.  Here  are the recipes.  You can adapt them to your taste.... Authentic Greek Salad you get served in Greece – Serves 4  4 x Tomatoes - Ripe, round, medium-size tomatoes cut into wedges
(Beef ripe tomatoes are best so if using x2).
½ x Large Cucumber - Cut into small chunks
1 x Bell pepper - Traditionally green, but I prefer the sweeter Red, up to you.
1 small Red onion - Cut into thin slices.
8 -10 Kalamata olives - Best whole but pitted if you prefer.
200 gr Feta - Served in a large chunk on top.
2 tbsp Extra Virgin Olive Oil 
1 tsp Dried Oregano 
½ tsp Sea Salt
1tbsp Red Wine Vinegar or White if you do not have red (Optional)  Combine your tomatoes, cucumber, pepper, and olives.
Pour your dressing over the salad (olive oil, dried oregano, salt and vinegar) and lightly toss to mix in.
Top with feta cheese and if you like olive oil a lot, pour a little more over the top of the feta and a sprinkle some more oregano. (Add more or less of the dressing to your taste.)
Ready to serve!  My version of Cypriot Salad – Serves 4  ½ iceberg lettuce shredded
¼ bunch fresh coriander leaves chopped (optional)
4 medium tomatoes chopped into small pieces
½ cucumber chopped into small pieces
1 Red pepper chopped into small pieces
2 Spring Onions or ½ small red onion finely chopped
150 gr. feta cheese cubed
8-10 black olives
2 tbsp extra virgin olive oil
½ lemon (if you do not have lemon then 2 tsp balsamic vinegar)
½ tsp Salt (less or more to your taste)  Combine your lettuce, coriander, tomatoes, cucumber, pepper, onion and olives into a bowl.  Pour over the dressing ingredients (Olive oil, lemon and salt) and mix.  Add cubed feta on top.
